I have been having puddles of water under the refrigerator. This has just started recently. There is not a tray to catch any water from its' defrosting.

There has to be a defrost drain pan under the unit or it would have leaked from the time it was first installed. Normally, when a unit begins leaking the defrost drain inside the unit has frozen up and the water has no place to go except in the floor of the unit and it will leak out of the unit into the floor. Without the model number, all I can do is speculate on the general causes of the complaint. If you want, you can re-post with a model number and we can go into detail on the units' operation and exactly where to check for problems.
