I read a coupld other responses and I just wanted to confirm what a closed reading is. For thermostat 31001088 I am reading about 7K ohms across the small terminals and about 0.8 across the larger terminals. Is the thermostat good?

This would indicate that the thermostat is closed and not open. If you have any reading this means that it is a closed circuit.You can test this with a multi-meter TJMA-DMT3.
