My refrigerator keeps tripping the breaker and won't start. It sparks every time you plug it into the wall all of a sudden. Just had it fixed. The defrost and the temperature sensor were replaced. Worked great for 4 days and now this.

This is impossible to diagnose without more details. I would start by looking at and around the last repair since this is the most logical place to start. Use your test meter at the plug, (with the unit unplugged and the meter set to the lowest resistance scale), since the short will read a very low resistance and when you unplug the responsible component, the short will disappear on the meter.
My refrigerator / freezer is making a "click click click" sound prior to the compressor coming on. I am assuming it is the relay. Should the relay and overload both be replaced at the same time?

They do not have to be replaced at the same time but it is recommended by the manufacturer to replace the overload at the same time as the relay because of electrical and thermal stress on the components.
