Oringanlly didn't believe it was the temperature probe because the oven was reporting the correct temperature, it just wasn't heating up to the setpoint (stopping at 378 instead of 400). Finally got one and replaced it. Been a little less than a week but so far everything has hit its mark. My only complaint was having to cut off the connector and use the wire nuts which were a bit big for the size.
