I couldn't unplug the wires out from the back of the oven and tearing the oven down to get at the source looked challenging so I cut the wires, slid some heat shrink over the wires and then soldered the new sensor to the wires coming out of the oven. When finished I slid the heat shrink over the connection and heated it with a match. I stuffed the wires back through the back of the oven and replaced the screws holding it in place. The oven is working fine.
