Replaced the Temp Sensor with the hope it fixed the issue rather than needing to replace the board. So far so good! The oven is holding temps steady. I'm guessing that even though the sensor metered good at room temperature, it was faulty when heated. Was worth the try before replacing the board since the price was fairly cheap.
The sensor was held into the oven by 1 screw at the top between the broiler element legs. I did have to remove the back panel to disconnect it though due to not being able to pull the connector through the back wall. It was caught around another wire. Very simple process though. Just be sure your power is off before working on the oven. A 1/4" nut driver is all that was needed to complete the repair.
