For an engine to run, it must first mix fuel with air to prepare the fuel for combustion. By sealing off the exhaust, this gasket allows for fresh air to enter into the carburetor from outside the engine rather than from the exhaust. Gaskets often degrade over time due to the stress of pressure and heat. If the exhaust gasket breaks its seal, it can affect the engine's overall performance.
