The replacement part was:

Part Number:WB27K10378
It looks like this superseded the original part, so maybe the mfg knew about this issue?
I could not find disassembly instructions so just went straight into it. Here's the steps from memory:
1) Shut off breaker for stove and confirm that panel lights go off
2) Pull range away from wall about 12"
3) Shut off gas feed to stove
