DGS, It won't be easy but yes you can access the back of the range, if needed. You will need to remove the front lower access panel and disconnect the flexible vent between the blower motor and the D/D plenum(air tunnel) tilt the range up a couple of inches in the back and slide the range out of the cabinet opening(it may take two people to do it, you would also wan't to remove the oven racks and door). But you should be able to or attempt to remove the oven sensor from the oven cavity. Remove the oven door and racks, remove the two screws that mount the temp. sensor to the oven wall, slowly , carefully remove the sensor and draw it out the wall opening. You may need a needle nose pliers to manipulate the connector through the opening, then you can change or service the sensor as necessary. Just remember to remove power to the range before you start any repair.
