I switched out the Defrost Sensor Assembly. After watching the video on AppliancePartsPros.com site I felt confident that I could do this myself. It all worked and it's been about 1 month now so fingers crossed that's that.
It wasn't hard, but it was time-consuming. It took right about 2 hours from start to finish. A ton of little steps to get where I needed to be.
