After a fair amount of investigation, removing and checking the ice maker, I concluded our old ice maker needed to be replaced. It was an easy thing to do using a video provided by APP.
It's now producing cubes, but not frequently enough. This implies either the water coming in doesn't have enough pressure or the water inlet valve needs to be replaced. I will do rectify the problem with confidence thanks to APP.
