Huang, Is your cooktop using Nat gas or LP gas ? it shouldn't make a "major" difference. As long as the flames from the burner are a "double" blue flames, with little to no white or yellow tipping at the top of the flame, you have a proper fuel air mixture, and the burners are working properly. You do need to realize that over sized pots and pans, as well as prolonged high temperature cooking, will deflect the heat from the burner and the bottom of the pot or pan back into the cooktop and can cause it to get extremely hot.
