Replaced the defrost thermostat (as that seemed to be the culprit) and also the thermistor kit (just incase, if you're opening up your fridge, might as well!) Followed the directions on the EXTREMELY helpful videos by Appliance Parts Pros. Took awhile (only ran into an issue while taking apart parts in freezer, one of my screws was hard to get out); but once in, the repair was quite easy and quick. I was originally planning to wait 2 weeks with the new parts to be very sure it would work, then that turned into more like a month and a half and our fridge/freezer is still humming and working VERY well. Temps are consistent in both. So very pleased and we saved TON not having to go buy a new fridge. WOOHOO.
