I used the forums and Q and A's on Appliance Parts Pros to learn that the RTD probe was probably damaged. A check of the old probes resistance revealed it was faulty.
My order of a new probe through APP was a relatively smooth process in that the order shipped the next day was here a day after that.
However, the new probe's electrical connector was a different style than the old one, so I ended up taking apart both connectors and re-establishing the new probe on the old connector. This was somewhat annoying, though I think this is a Frigidaire issue, not APP. Either way, in the end it worked out and was a lot easier/cheaper than calling in a repairman.
One side note, I ended up using sockets to remove the screws on the oven's back panels as they tended to strip with a screwdriver.
