I started by ordering the temp sensor and replaced the sensor in the fridge which did not resolve the issue. Replacing the sensor was very simple. I just had to remove everything from the refrigerator compartment and then remove 6 screws to pull the back panel off. There were some additional screws on the back side which needed to be removed to allow me to replace the temp sensor.
This is a fairly cheap part but I recommend testing the sensor with a multi-meter and checking the Ohms while the temp changes. There are videos on how to check them online, they are also referred to as thermisters. All mine checked out OK.
In the end I also started having issues with my freezer and fridge warming up then freezing again so I ordered a main control board (Part # DA41-00293A) which solved the issue. Replacing that was super easy as well.
