Thanks to the review by Dennis M (https://www.appliancepartspros.com/diy-story-fan-turntable-door-open-worked-fine-diy713729.html), I figured out the issue was likely to be one of the door switches.
Ordered all 3, but turned out that I only needed to replace the bottom one. You need a special hexagonal screwdriver head to remove some of the screws on the exterior metal case so make sure that you have that before you begin (I ordered a screwdriver appliance repair
kit for ~$14). Once all screws are out, remove the case by sliding it back (away from the front).
Reached in and removed the 2 wires attached to the bottom switch. Again thanks to Dennis, I knew to press a small plastic catch under the switch with a small screwdriver which let the switch rotate down so it could be easily removed. Replaced the switch (you have to push quite hard for it to click properly in place - I used a screwdriver to assist. And that was it - problem solved in less than 10 minutes!
My beloved microwave/pizza oven is now back in action and hopefully will continue to work for another 20 years!
