I ordered the replacement gasket and...replaced it.
One issue was that the replacement procedure was not at all like the video to which I was directed when I got the gasket. The video showed a gasket with a rigid flange that had to be inserted into the door structure. On my Amana, I clearly had to remove the inner plastic liner and set the gasket under it. This was not particularly difficult but certainly wasn't the same process.

Replaced the water tube that went from the plastic tubing to the ice cube tray. Found that even though it was the same exact length as the original, there was only an extremely small gap from the end of the tube to a splash board. This may have been the root cause of my problems.

After running some tests I determined that the problem was a bad defrost timer. The timer
would occasionally fail to trigger the compressor to restart at the end of the defrost cycle.
Since I had the unit taken apart, I replaced the termination t-stat and the compressor start relay at the same time.

Tested start relay and fan with multimeter both passed.
The condenser would start only if the thermostat was on the highest setting and the refrigerator would cool for a while, stop and not restart unless I adjusted the defrost timer. Decided to replace the thermostat, defrost timer and defrost thermostat. The refrigerator is working as expected. FYI on a Kenmore 59669142992 the defrost timer is located under the freezer in the front right.
